Beef

7-Bone Roast - Don

3 1/2 to 5 # 7-Bone Roast
1 TBS Dried Onions, diced or granulated
1 TBS Dried Garlic, diced
    Black Pepper, ground

Preheat oven to 350. Sprinkle both sides of roast with remaining ingredients and press into meat.  Place in a cooking dish ( I like to use a rectangular Pyrex) and cover tightly with aluminum foil.  Cook for 2 1/2 hours. Remove cover and drain any excess liquid (save the liquid if you want to make gravy).  Cook an additional 30 minutes and serve.  

 

Beef Burgundy

3 lb Lean beef cut in 1 inch cubes
1 cup V-8 juice
1 cup Beef
1 cup Red wine
1/2 cup Brown sugar
1 onion Sliced
1/2 tsp Celery salt
1/2 tsp Oregano
2 bay Leaves
1/3 cup Water
3 Tbsp Cornstarch

Combine all ingredients except cornstarch and water in large saucepan. Cover and simmer till tender, 2 hrs. Stir occasionally. Remove bay leaves. Combine cornstarch and water and stir mixture into hot stew. Cook till thickens. Serve over noodles.

 

Beef Roll Mozzarella

1 1/2 lb Ground beef
1 tsp Salt
1/2 cup Pkg bread crumbs
1/2 tsp Pepper
1 can, 4 oz mushroom stems & pieces
1 Egg beaten
1 tsp Onion flakes
2 Tbsp Dry vermouth
1 can, 15 oz. tomato sauce with
tomato Bits
1 1/2 cup Shredded mozzarella cheese

Combine meat, salt, pepper, onion, egg, bread crumbs in large bowl. Drain mushrooms, reserve. Add enough water to mushroom liquid to make 1/2 C add to meat mixture. Press mixture into a 10 x 14 rectangle on wax paper. Sprinkle surface with mozzarella. Roll up jelly roll, seam down in 9 x 13 pan. Combine tomato sauce with vermouth, spread half over roll. Bake 375 40 mins. Spread remaining mushrooms and crumbs bake 10 mins more.

Chuck Roast

3 # Chuck roast
3 tsp A 1 sauce
1 pkg Onion soup mix
1 can Mushroom soup
carrots and Potatoes

Wrap all in Reynolds wrap and bake 350 for 3 hrs. Place potatoes and carrots around roast.

 

Cube Steak Parmesan - Jill

6 beef Cube steaks
3 Tbsp Flour
1/3 cup Parmesan cheese
1/2 tsp Salt
1 (15 Oz) can tomato sauce
1/8 tsp Pepper
1/2 tsp Basil leaves
3 Tbsp Oil
1 clove Garlic crushed
1 Egg
1/4 cup Parmesian cheese
2 Tbsp Water
3 - 4 slices Mozzarella cheese
1 tsp Oregano
2/3 cup Fine dry bread crumbs
1 Tbsp Sugar

Combine flour, salt & pepper; dredge steaks. Beat egg, & water. Combine bread crumbs, 1/3 C Parmesan. and basil. Coat steaks in egg mixture then crumbs. Place oil in 9 x 13 pan, place in 375 oven. Bake breaded steaks uncovered 30 mins. Pour off drippings. Combine tomato sauce, sugar, garlic & oregano, pour over meat. Sprinkle with 1/4 C Parmesian. cheese, return to oven & bake 20 mins. Place sliced or shredded cheese over each steak, sprinkle oregano & bake 3-5 mins.

 

Cube Steaks

1 medium Onion chopped
1 clove Garlic chopped
4 Tbsp Fat
1 can Tomato sauce
1/2 cup Herb bread stuffing
1 1/2 tsp Salt
1/2 tsp Pepper
6 minute Steaks
1/2 cup Water

Cook onion and garlic in 2 Tbsp fat 5 minutes. Combine with half of tomatoes sauce, bread stuffing, salt and pepper. Spoon mixture on steaks. Roll and brown steaks on all sides and pour over rest of sauce and hot water. Cover and simmer 40 mins.

Flank Steak - Oldham

1 cup Oil
1/4 cup Soy sauce
3 Tbsp Vinegar
Honey
garlic Clove
green Onions
Ginger

Marinate 1/2 - 1 day then grill.

 

Fondue Bourguignon - Sally Ann

Sirloin steak, cut in 1/2 in cubes
Garlic
Salt andPepper
1 cup Butter
2 cup Peanut oil

Sauce

1/4 cup Catsup
1 tsp Soy sauce
1 Tbsp A1 sauce
1 Tbsp

Cut off fat from steak and cut in cubes. Sprinkle meat with garlic, salt and pepper 2 hours before dinner and put in refrigerator. Heat 2 sticks butter and 2 cups peanut oil in saucepan over direct heat. When mixture begins to bubble pour into a 2 qt fondue dish. The dish is placed over heat to keep fat gently bubbling. Sally uses peanut oil. Mix sauce ingredients. together and dip steak piece in after cooking. 3 lbs of steak works for 6 people.

 

Grilled Flank Steak

Garlic powder
3 # Flank steak
1/2 cup Soy sauce
1/4 cup Worcestershire sauce
1/4 cup Salad oil

Sprinkle garlic powder lightly on both sides of steak. Prick both sides with fork. Combine soy sauce, worstershire and oil, pour over steak. Marinate 6 - 8 hours at room temp, turn frequently. Remove from marinade and cook over medium heat 7 mins. for med. rare. Slice across grain in thin slices. Marinade may be refrigerated and used again.

 

 

Holupki - Gallo

1 Onion
1 cup Rice
1/2 stick Butter
1 tsp Salt
1 lb Ground chuck
1 tsp Pepper
1 can Tomato soup
1 Egg
1 head Cabbage

Brown onion in 1/2 stick butter. Cook rice and add to chuck with salt, pepper and egg. Core cabbage, run a little cold water over it. Put leaves in boiling water for 2 mins. Mix can of tomato soup, can of water Put meat mixture in leaves folding on ends and put in tomato soup mixture. Instead of cooking in tomato soup may try can of tomato juice and bottle of ginger ale.

 

Holupki - Nixon

1 cup Raw rice
2 Eggs
2 cup Salted water
1# ground Beef
1/2 tsp Garlic salt
1 Tbsp Onion salt or minced onion
Zaprashka
1 large Firm cabbage
1/4 cup Butter
1 can Tomato soup
3-4 Tbsp Butter
1/2 cup White vinegar

Cook rice in 2 C water. Set rice aside to cool. Mix beef, eggs, garlic salt, onion and rice. Add salt and pepper. Cut core of cabbage out and separate. Steam leaves 3-5 mins. Put meat in cabbage, roll tight like newspapers tucking loose ends in with fingers Arrange holupki in covered pot or pan. Add 1 can soup plus enough cabbage water to cover holupki. Cook 1 1/2 hrs in 350 oven. Add vinegar & zaprashka last 15 mins. Zaprashka - To 1/4 C butter add 3 to 4 Tbsp flour. Brown and thicken in small pan and add to holupki.

 

 

London Broil

3/4 cup Oil
3 Tbsp Vinegar
1/4 cup Soy sauce
1 tsp Garlic salt
1/2 tsp Ginger
4 chopped Green onions
1/2 cup White wine optional

Mix ingredients together and marinate 4 hrs or overnight. Grill or broil steak.

Meat Loaf - Finney

1 cup Bread or cracker crumbs
1/2 chopped Green pepper, optional
1 Onion, chopped
1 can Hunts tomato sauce
1/8 tsp Garlic powder
1 Egg
Salt and Pepper

Mix all ingredients except use only 1/2 can Hunts sauce. Put in Pyrex pan and put other half of Hunts sauce on top. Bake 45-60 mins. uncovered.

 

Meatballs - Mike

1/2 cup Cooked rice
1 tsp Accent
1/4 cup Parmesian. cheese
1 tsp Sea. salt
1 tsp Garlic salt
1/2 tsp Pepper
1 tsp Accent
1 tsp Oregano
1 Egg
1 Tbsp Onion
1/2 cup Bread crumbs
Flakes
1 can Tomato soup
1 can Hunts
1/2 jar Pizza sauce
1 lb Ground sirloin

Mix all ingredients except soup and sauces. Brown meatballs and put in sauce and simmer for an hour. Serve over noodles or rice.

 

Meatballs for Sauce - Gallo

1 1/2 lbs Ground round
1 tsp Salt
1/2 tsp Pepper
1 Tbsp Parsley
Garlic powder to = 1 clove
Parmesian Cheese
1 Egg
1 cup Bread crumbs or 2 slices
Basil

Sauce

large can Tomato puree plus
3/4 can Filled with water
1 can Tomato Sauce
Oregano

Make meatballs and brown. In fry pan after removing balls add 1-2 small cans Hunts sauce and sprinkle over oregano. Put puree and water into pan and add the sauce mixture plus meatballs. Simmer at least half a day skimming off grease and stirring occasionally

 

 

Polynesian pot roast

1 - 2 1/2-3# pot roast
8 cloves Garlic
1 tsp Salt
1/2 tsp Pepper
3, 8 oz Cans tomato sauce
2 Tbsp Oil
1 tsp Ground nutmeg
2 Tbsp Vinegar
6-8 whole Cloves
1/2 tsp Ground cinnamon
1/2 tsp Ground allspice

Make slits in top of roast with tip of knife & insert garlic cloves. Sprinkle roast with salt and pepper. In large skillet brown meat in hot oil. Combine tomato sauce, vinegar, nutmeg, cloves, cinnamon and allspice. Pour mix over meat cover and simmer 1 1/2 hours till tender. Remove meat to cutting board. Bring juices in skillet to boiling, boil uncovered 5 mins. Serve sauce over meat. May serve meat & sauce over spaghetti noodles.

 

 

Round Steak Sauerbraten - Jackie

1 1/2# round Steak 1/2 in thick
2 Tbsp Fat
2 envelope Brown gravy mix
4 cup Water
2 Tbsp Minced onion
1 tsp Salt
4 Tbsp White vinegar
1/2 tsp Ginger
4 Tbsp Brown sugar
Noodles
2 tsp Worstershire sauce
2 bay Leafs

Cut meat in 1 in squares. In large skillet brown meat in hot fat. Remove from pan, add gravy mix and water. Bring to boil, stir constantly. Stir in remaining ingredients except noodles. Return meat to skillet, cover and simmer 1 1/2 hrs stirring occasionally. Remove bay leaf. Serve over noodles.

 

Sloppy Joes - G. Jones

1 cup Chopped onion
1 cup Chopped pepper
1 lb Ground chuck
1 Tbsp Sugar
1 cup Tomato sauce
3 Tbsp Catsup
1 Tbsp Vinegar
1 Tbsp Prepared mustard
1 Tbsp Worcestershire sauce
1 tsp Garlic salt
1/4 cup Parmesian. cheese, optional

Brown onion and pepper, add ground beef. Add rest ingredients and simmer a few minutes. Serve on buns.

Stuffed Green Pepper - Micro

1 lb Ground round
1 Egg
1/2 cup Chopped onion
1 tsp Salt
1 Tbsp
1/4 tsp Pepper
1/4 cup Milk
4 green Peppers halved and seeded
1 - 8 oz can tomato sauce
1 Tbsp Instant onion soup mix

Combine all ingredients except green peppers and tomato sauce and soup mix. Stuff pepper halves and place 9 inch pie plate. Pour tomato sauce combined with onion soup mix over peppers and cover with plastic wrap. Cook at roast 15 to 20 mins.

 

Stuffed Peppers

2 med. Green peppers halved
1 # Ground beef
1 1/2 cup Cooked rice
1/3 cup Chopped onion
1/3 cup Grated Parmesian cheese
2 tsp Salt
1/8 tsp Pepper
2 - 8 oz cans tomato sauce

Mix beef, rice, onion, cheese, salt and pepper and 1 can tomato sauce. Pile into pepper halves, arrange in 2 qt casserole. Pour remaining sauce over peppers. Bake 350 for 1 hr 15 mins.

 

Swedish Meatballs

2 slices Bread broken or 1 cup
1 tsp Salt
Flavored crumbs
1/2 tsp Pepper
1/2 # Ground beef & 1/2# ground pork
1/4 tsp Nutmeg
2 Tbsp Minced onion
1 Egg
1/4 tsp Ground allspice
2 Tbsp Sour cream

Soak bread pieces in water and squeeze out excess. Add to beef along with other ingredients. Shape in balls and fry. Mix up onion gravy pkg and put meatballs in and simmer. Can use can of mushroom soup, reg, or golden and add 3/4 can water or use 1 cup beef broth and 1 cup light cream for sauce.

 

Swedish Meatballs - Mom

2 1/2 slices White bread
2 Tbsp Sour
1 lb Ground beef
1/2 cup Water
1/2-1 cup Dry bread crumbs
1 tsp Salt
dash Pepper
1 onion
3 Tbsp Butter or oleo
1/4 tsp Allspice

Break bread into small pieces, soak in water, squeeze excess. Add to beef and season with salt, pepper and onion. Mix and add sour cream. Shape into tiny bite size balls, roll in bread crumbs. Melt oleo in skillet and fry over medium heat turning constantly to brown on all sides, about 10 mins. Remove from pan, drain and place in foil pan cover and freeze. At party time remove foil cover and bake 350 to thaw about 30 mins.

Whimpies

1 small Onion
1 lb Ground beef
1 tsp Mustard
1/2 cup Catsup with 1/2 C water
salt and Pepper

Sauté onion in small amount of butter. Add ground beef and brown. Add remaining ingredients and serve on toasted buns.

 

Zesty Meatballs 

1 1/2 # Ground chuck
1 onion
3/4 cup Soft bread crumbs
3/4 tsp Salt
3/4 tsp Chili powder
1/4 tsp Pepper
vegetable Oil
1/4 cup Sugar
1/4 cup Worcestershire
1/8 plus 1 Tbsp vinegar
Parsley
1 1/2 cans Tomato sauce, 8 oz

Combine chuck, onion, breadcrumbs, salt, pepper, chili powder and milk. Shape into balls and brown in hot oil, Place in 9 x 13 pan. Boil tomato sauce, vinegar, worstershire and sugar for 1 min., stir constantly. Pour sauce over balls. Bake 325 for 30 mins.
